It's baking outside and I'm worried about leaving my dog in the car even for quick errands. I know it's unsafe to leave him unlocked, but can I lock the car with the AC running to keep him cool?

AFAIK, it doesn't have that feature like Tesla's Dog mode but you can do it manually. While the car is idle, open the door, open the window, close the door, lock it and then quickly close the window from the outside.

The AC could fail or turn off unexpectedly. So please be cautious when you lock the car with the AC running. Try using a pet cooling mat or a portable fan. I have used both and they really help keep my dog comfortable on short trips.

Also, a pet-safe temperature monitor would work, too. Don't you think? It alerts you if the car gets too hot.
